whenever i'm in paris I SPRINT to rose bakery in pigalle, which i see to be the finest takeout restaurant in the world. they have countless varieties of vegetables, proteins, quiches, cakes, all so fresh and cooked to absolute perfection. along the lines of heirloom tomato panzanella and eggplant with tahini and fermented mustard seeds. i dream of it every night and day.
